MISSED OUT!

Disap'point'ed!!
Beautiful sunshine bathes the lanes and fields this week, but we missed out on our walk this morning, as I woke at 2am with a temperature and sore throat!  So I am resting up for a few days with my paperwork! Also being laid up, has meant I can go through my emails, and read them properly, for a change!

I get regular emails from 'Clean Plate' a very inspirational company that updates and suggests ways of cooking and eating in a more healthy fashion, although Helen is a great source of info on all things healthy...

This is a great recipe that eased me in to eating in a different way - my pasta would always involve a meat sauce, but try this! 

LENTIL BOLOGNESE
serves 4
3 large carrots 
175g sun -dried tomatoes 
3 cloves of garlic, peeled and crushed
2 x 400g tin tomatoes 
2 tubes of tomato purée (400g)
2 1/2 mugs of green lentils (500g)
500g of gluten-free pasta 
Salt and pepper

Grate carrots, chop sun dried tomatoes.  Add to a large saucepan - carrot, tomatoes, crushed garlic, tomato purée, lentils and 1 1/2 mugs of hot water.  Stir and allow to cook for 45 mins to 1 hr.  Enjoy with pasta and for added chunkier texture, add kidney beans - these provide an extra boost of protein...

But right now I am heading to the kitchen for more hot lemon and manuka honey! Thoughtfully donated by my walking buddy! Cheers Helen...
